Baking Industry Level II

(Advance Level of the Diploma)

Course Objectives
Further develop the student’s fundamental skills and techniques of baking after completing BIL III and apply them to a range of advanced skills at baking in BIL II. The course consists of three advanced modules in Bread, Cake and Pastry Making.
Course Syllabus
• Knowledge and function of ingredients
• Processing techniques
• Mixing methods and procedures
• Piping, finishing and decorating skills
• Bakery production planning and costing
• Development and maintenance of standards of hygiene, health and safety
• Evaluate the quality of bakery products
• Learn trouble shooting techniques
• Finish batch bakery products

Entry Requirement
Baking Industry Level III certificate (Intermediate Level of the Diploma)

Certification
Certificate in Baking Industry Level II will be awarded after obtaining the required pass mark at the prescribed examination.
